Potluck by bicycle

OK, so they're having a potluck at work and I'd like to bring something other than cookies. The trick is getting the crockpot in my backpack. Just joking. Probably spill on the laptop. Anyway .... need to find some recipes. Tasty, easy, creative, and transportable by bicycle are the requirements. Any ideas?

i dunno if your potluck has come and gone, but lately i've been way into this simple dish thats basically cous cous and almonds with some other scrumptuous stuff thrown in.

i'll fish up the recipe if you are still looking for some portable eats.

Yes, please. Love to have the recipe. Made cous cous the other night and remembered how much I liked it.

here it is, enjoy:

some olive oil
1 cup chopped almonds
4 cloves of chopped garlic
1 tsp paprika
1 tsp ground cumin
3/4 tsp ground corriander
1/2 tsp cayenne
2 1/2 c. veg broth
2 c. drained chickpeas
1 c. chopped dates (or a little less - raisens work in a pinch)
1 1/4 c. couscous
salt/pepper if you want
1/2 c. chopped scallions (or a little more)

heat olive oil, saute almonds over medium heat until fragrant (2 min) add garlic and cook 1 min.

stir in spices.

add broth, chickpeas, dates. bring to a boil and add couscous. stir once to combine, cover pan and remove from heat. let it sit for 5 minutes.

fluff it. put scallions on it. eat it. yup.
